Estimating mass fraction based on a two dimensional image

I would like to estimate the mass fraction of wood in a pile of wood flakes and bark that is spread out on the floor. I was thinking of using the segmentation algorithms to get an area faction based on the images. I can easily segregate the bark and fiber but sometimes I have background visible in the images that is neither bark nor wood. I haven't figured out how to separate the background area out.

Once I have the wood and bark area, how can I get to volume then mass faction. I was just going to use the area fraction as an indication of volume faction but I am not sure that is correct. To get to mass fraction I wa goind to use an estimate of the density of the two factions.
