CivilCapture is based on standard drivers (WDM of Windows, Quicktime
on Mac, V4L2 on Linux), so if the cameras you selected have that
drivers, you could try. However, there could be some bottleneck either
software or hardware to reach that frame rate, at maximum available
resolution.
Retiga EXI specifications tell: 10fps full resolution @ 12 bits
(165fps maximum with binning and ROI functions) ; Hamamatsu
specifications tell Frame Rate 9 frames/sec (full resolution), 18
frames/sec (2x2 binning).
