I think that it is safe to assume that ImageJ2 will be stable and robust
enough for everyday-use by then.
Besides, there are additional advantages to teaching ImageJ2 plugin
programming: ImageJ2 plugins can run without change in KNIME, CellProfiler
and Alida. By design, they will also be able to be run in the Cloud or in
a cluster. I am also confident that by February 2013 other projects such
as Icy will have finalized their support code to run ImageJ2 plugins (we
are actively fostering collaboration and interoperability; developers of
KNIME, CellProfiler, Icy and OMERO attended in past hackathons and will
probably do so in future ones, too).
So my suggestion would be to plan to give an introduction to ImageJ2
plugin programming.

available as I will teach at least one ImageJ2 plugin development workshop
