A Japanese sushi chef is trained to make sushi with focus and patience. The job centers on using fresh, top grade items. That can include fish, shellfish, rice, greens, and seaweed.  

The chef makes the sushi rice with care and correct seasoning. Then the chef cuts the fish using good knife control. After that, the chef puts each piece together so the balance feels right.
