Dear Graham,
Set the lateral and axial scales under Image/Properties
then reslice the image in your preferred axis:
Draw a rectangular ROI on a representative xy plane,
Image/Stacks/Reslice...
select the direction to reslice, e.g. "top", "Left", etc.
result is a new stack from the x,z or y,z orthogonal plane.
