Setting the scale bar myself.

Hi I have Magnesium/Calcium maps of a marine plant and I want to set the scale on my Rainbow LUT so that I can see the variation in the Mg/Ca ratio. At the moment it is all blue and is only using a small part of the spectrum of the LUT, how do I set the scale myself so that the entire spectrum of colour is used?
