Dear Ben,
Changes last year or so hid away the smoothing and other options to the right-click menu of the 3d viewer.
So an approach that could work:
1. Show in 3d without much downsampling. Try what works best for your data.
2. Select the volume in 3d by clicking on it.
3. Right-click and choose the smoothing menu item, the one that ends up showing a slider to adjust the smoothing interactively.
