You can undo the pseudocolor by choosing Image>Lookup Tables>Grays.

If you have a multi-channel image (i.e. if your image window has a slider
labeled with 'C'), you can go to Image>Hyperstacks>Channels Tool... and
select "Grayscale" instead of "Composite".
