I am not aware of an option/plugin in ImageJ to make multiple profiles in this way but there is the option to do Multi Measure in the ROI Manager (More >> Multi Measure). If you select in the pop-op menu both 'Measure all slices' and 'One row per slice' you get a table with the data for each particle in a column. Save this and you can open it in excel to make the profiles. Under Analyze > Set Measurements... you can select the parameter you want to analyse, most likely 'Integrated density'.

Subject: Multi Z-axis profile
Hello, ImageJ'ers!
I have a large number of particles in my field of view, that I image as a
function of time, thus creating a stack. The particles do not move in X Y,
but their intensity is changing from slice to slice. I am detecting them
(threshold, then analyze particles) on a Z-projection of all slices, and am
adding all of them to the ROI manager. Now, coming back to the stack, I
would like to have all of their intensities as a function of time. At the
moment I am "Z-axis profile" for each one of them, one at a time, but this
is very tedious (many hundreds of particles). The question is whether you
are aware of some method to have the time profiles (Z-axis profile) of all
the ROIs registered in the ROI manager?
