Hi Ellen,
We have a short list on our website:
http://hcbi.fas.harvard.edu/external-microscopy-courses(I'm happy to add others....)
These mainly focus more on microscopy than image analysis and are all on
the east coast of North America.
Quantitative Imaging: From Cells to Molecules is currently receiving
applications and they have a very large image analysis component.
