Or maybe use a false colour LUT to show the pixel intensities.

it is not clear to me what you want.

Do you want to read the numbers of the pixel values on the screen?
For a small area, e.g. 5*5, 7*7, etc (up to 21*21) pixels, you can see this with the Pixel Inspector Tool

Do you want to export the numbers, for use in a Spreadsheet or so?
Then duplicate the selection, and use File>Save As>Text Image.

Do you want to plot the pixel values as a 3D graph?
Then use Analyze>Surface Plot or the Interactive 3D Surface Plot plugin.
