Interesting to see that you seem to have learned this.
For good reasons I doubt that it holds true in general.
Present day AI and machine learning appears to do magic but actually is
quite limited with many respects. In any case, always make sure that
results obtained with such techniques not only appear reasonable but
come close to the facts.

There is no doubt that the human eye is not very good in making
quantitative assessments. Machines do a much better and more reliable
job but this does not necessarily hold for AI and machine learning
approaches.
Regarding image processing, you will find a lot of AI and machine
learning software, and even some approaches that work together with
ImageJ. You may start with classification software such as WEKA but
there are "Ilastik", "ImJoy", "Orbit", "ZeroCostDL4Mic", to name a few...
