Hi Giacomo,
if you can convert your image to a binary one showing the cell
walls, e.g. .by thresholding, you can use
Process>Binary>Distance Map ("EDM" for short) or
Process>Binary Ultimate Points. (see the documentation)
Especially, the value of the EDM at the pixels obtained by
Skeletonize might be interesting (skeletonize a duplicate of the
binary image, Create Selection, transfer it to the EDM by
Restore Selection. Them, the Mean obtained by the Measure
command should give you roughly half the thickness of the walls
in pixels.
