The company that I work for is looking for someone to possibly give a
course on ImageJ.  I would like to know if anyone knows of someone that is
capable of teaching this course.

Where? When? For what audience? The ImageJ mailing list covers the
entire world.
I have already taught one such course at the MPI-CBG in Dresden, Germany.
At the moment I'm in Los Angeles.

It basically depends on the application.
If you have in mind imaging/microscopy and the course is in or around Europe
I can be of help. I have already given a workshop
on the ImageJ Conference and will give some lectures in Russia in the spring.
Albert is right, the list covers all of the world
and all of the possible applications
