Using HSB stack to analyze Saturation of image

Hello. I was wondering, if I convert my image to a HSB stack, and take
measurements of the mean gray value of the saturation slide, is that a
correct representation of the image's overall saturation, as opposed to
other images, for example?

Good day!

Yes I think you are right!
You may even use "Stack to Images" and work with the "Saturation" only.
