Download the OS X version of Fiji from
http://fiji.sc/#downloadYou will get the latest version which comes bundled with Java 8. It should
"just work" out of the box.
The only downside is that ImageJ still has some performance issue with Java
8 on OS X. But I suggest you give it a try and see how it goes for you. If
you find it to be unusable, definitely let us know, and we can prioritize
further investigations. (And in the meantime, switching back to Java
6—while more complex to set up—avoids the performance problems.)
