Hi Santiago,
ImageJ has so many functions (and new ones being added all the time) that it's impossible to find one source to explain them all! For a beginner to learn the basics, the ImageJ documentation page (http://rsbweb.nih.gov/ij/docs/index.html) is a good place to start. There are links to tutorials that cover general use of ImageJ and documentation on many of the built-in functions of ImageJ. ObjectJ also has a tutorial page (http://simon.bio.uva.nl/objectj/2-Tutorial.html) that walks you through some of it's basic functions. It depends on exactly what kind of information you want from your images what functions you'll end up using. Something as simple as drawing a line along a radius of your tree ring image and then using Analyze -> Plot Profile will give you a graphic representation of the tree rings.
